Arkansas Chicken
Preparation:
Cut chicken into small strips. Place strips in a medium bowl. Then you add salt, Accent, pepper and let it set for 15 minutes after mixing. Add oil, cornstarch next, mix well. Let this set for 15 minutes. Stir in egg the egg whites and paprika. Let set for 15 minutes. Heat the margarine and quick fry 5 to 10 minutes until it has lost translucent appearance. Separate while frying. Serve with cocktail or barbeque sauce.
Creole Chicken with Beans
Preparation:
Cook chicken, onions, peppers, celery and garlic in large skillet over medium high heat, 3-4 minutes or until chicken is lightly browned and vegetables are tender. Add remaining ingredients, except rice. Bring to a full boil, reduce heat to low, simmer uncovered, about 10 minutes. Serve over hot cooked rice. Makes 4 (1 1/2 cup) servings. “It is hard to tell whether a person is walking to reduce, or reduced to walking.”
Mushroom Chicken and Rice
Preparation:
Put rice, soup, mushrooms, water and seasonings into Dutch oven (12 inch). Stir. Place chicken on top of mixture. Cover. Cook 1 1/4 to 1 1/2 hours at 400 degrees.
Turkey Lasagna
Preparation:
Add ingredients and simmer for 25 to 30 minutes. Cook noodles and 6 ounces lasgna noodles according to directions. Layer noodles, tomato mixture, cottage cheese mixture and 8 ounces Mozzarella cheese, ending with sauce. Bake at 350 degrees for 30 to 40 minutes. 9 servings.
Lemon Baked Chicken
Preparation:
Marinate chicken breast in lemon juice. Refrigerate for at least 1 hour or overnight. Heat oven to 350 degrees. Spray pan with Pam. Combine flour, salt and pepper. Cover chicken pieces in the flour mixture. Put chicken pieces in pan and cook until brown, 50 to 55 minutes.
