Island Shrimp Cocktail

[expand title=’Ingredients’]1 lb. cooked, shelled lg. shrimp
2 c. juice-packed pineapple tidbits, drained (reserve the juice)
Lettuce
1/4 c. pineapple juice (from can)
1 c. low-calorie creamy French salad dressing
1/4 c. soy sauce
2 tbsp. grated fresh ginger root (or 2 tbsp. ground ginger)
Parsley
Lime wedges[/expand]

Preparation:
Arrange shrimp and drained pineapple on lettuce in 8 stemmed cocktail cups. Combine remaining ingredients, except parsley and limes; mix well. Pour over shrimp. Garnish with the parsley and lime. Makes eight servings, 170 calories each.

Low Cal Shrimp Salad

[expand title=’Ingredients’]1 (8 oz.) cottage cheese, small curd
1 lb. shrimp, boiled, deveined & chopped
2 eggs, boiled
2 lg. tomatoes, sliced
Salt & pepper to taste
Paprika[/expand]

Preparation:
Mix together cottage cheese and chopped shrimp. Peel eggs and mash until fine. Mix with cottage cheese and shrimp. Add salt and pepper to taste and sprinkle with paprika for color. Arrange sliced tomato over top of shrimp mixture. Serve with crackers and beverages. Serves 6.

Russian Tea

[expand title=’Ingredients’]4 tsp. instant tea
1/8 tsp. ground cloves
1/2 tsp. cinnamon
1/2 tsp. orange peel–For 1 cup dry mix:–16 tbsp. tea or 1 c.
1 1/2 tsp. cloves
6 tsp. cinnamon
6 tsp. orange peel[/expand]

Preparation:
Measure 1 teaspoon. Add 1 cup boiling water. Let stand for 1 minute. Strain. Add sweetener. Low calorie. Makes 12 cups.

Peach Crispy

[expand title=’Ingredients’]2 c. peaches or other fruit, fresh or drained
1 c. grapenut
1 tsp. cinnamon
1/2 tsp. cloves
2 tbsp. low-calorie margarine
2 pkgs. Sweet & Low[/expand]

Preparation:
Place peaches in baking dish. Sprinkle one pack of Sweet & Low and half spices over them. Cover with grapenut, rest of spice and sweetener. Place margarine on top and bake in microwave for 6 to 8 minutes. Enjoy! Very good for breakfast.

Bran Muffins

[expand title=’Ingredients’]1 1/4 c. all-purpose flour
1/2 c. sugar or sweetener
1/2 tsp. salt
1 tbsp. baking powder
2 c. extra fiber all-bran cereal
1 1/4 c. skim milk
1 egg or egg substitute
1/4 c. vegetable oil
1 c. raisins[/expand]

Preparation:
Stir together flour, sugar, salt and baking powder. In large mixing bowl combine all-bran and milk. Let stand about 5 minutes. Add flour mixture and raisins. Stir only until combined. Spray 12 muffin pan cups with no-stick spray. Divide mixture into 12 cups. Bake at 400 degrees for approximately 20 minutes. For reduced calories, use 2 tablespoons sugar and 2 tablespoons of oil instead of above amounts.
