Dill Marinated Shrimp

Ingredients
26 – 30 peeled, cooked & deveined shrimp–MARINADE:–1/4 c. salad oil
2 tbsp. dry wine
6 tbsp. fresh lemon juice
1 tsp. dill
Few grains garlic powder
1 drop Tabasco
1/4 tsp. salt
1 1/2 tsp. chopped chives

Preparation:
Cook shrimp. Combine marinade. Add shrimp and marinate for 8 hours. Drain and serve.

San Juan Shrimp Boat

Ingredients
2 lg. ripe avocados
Lemon juice
2 med. tomatoes
1 tsp. sugar
1/2 tsp. salt
Pepper to taste
1/8 tsp. ground turmeric
1 tsp. chopped parsley
2 green onions, minced
Sprig fresh mint, chopped fine
1/2 tsp. cider vinegar
1/2 tsp. water
Dash of cayenne pepper

Preparation:
Halve avocado and remove seeds. Scoop out pulp and dice. Put shell with lemon juice and set aside. Peel and chop tomatoes. Mix all remaining ingredients except shrimp and watercress. Pour over tomato and avocado pieces, mix carefully. Fold in shrimp. Pile mixture in avocado shells, top with water cress, sprigs and chill. Makes 4 servings.

Ray’s BBQ Shrimp

Ingredients
12″ metal skewers or wooden skewers, soaked
Large shrimp
Bacon
SAUCE:
1 (16 oz.) jar Cattleman’s or Bulls
Eye BBQ Sauce
6 tbsp. Worcestershire sauce
6 tbsp. Horseradish

Preparation:
Combine sauce ingredients. Wrap shrimp in bacon starting at tail. Thread on skewer, about 5 per skewer. Grill over medium flame, brushing with sauce and turning often. Cook until shrimp are bright pink and bacon is crisp.

Bayou Butterflied Shrimp

Ingredients
1 lb. med. shrimp in shells, uncooked
1/4 c. butter or margarine
1/4 c. vegetable oil
2 tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
2 tbsp. barbecue sauce
1 bay leaf, crumbled
1 garlic clove, crushed
1/2 tsp. dried basil leaves
1/2 tsp. dried rosemary leaves
1/2 tsp. Paprika

Preparation:
Butterfly shrimp by cutting lengthwise down back, not cutting all the way through. Do not remove shell. In a large skillet, melt butter or margarine; add shrimp. Saute’ 3 to 4 minutes, stirring occasionally. Cover and let stand about five minutes. Spoon shrimp and sauce into a large serving bowl. Makes 35 to 40 appetizer servings.

Coconut Butterflied Shrimp

Ingredients
1 lb. lg. shrimp, shelled with tails intact
1 extra lg. egg
6 tbsp. milk
1 tbsp. brown sugar
1/2 c. all purpose flour
1/2 tsp. salt
4 oz. (1 1/3 c.) unsweetened shredded coconut
Vegetable oil for frying

Preparation:
Butterfly shrimp by cutting along curved back almost through other side. Open each shrimp like a book and remove intestinal vein. Rinse gently under cold running water. Whisk the egg, milk and sugar in mixing bowl until smooth. Gradually whisk in flour and salt, then continue whisking constantly until batter is perfectly smooth. Let stand 30 minutes. Spread cocnut in a thin layer on baking sheet. Hold one shrimp by tail and dip in batter, making sure batter coats all surfaces. Wipe shrimp against rim of bowl to remove excess batter and place on coconut. Repeat with remaining shrimp. Turn each shrimp in coconut to lightly coat and place on wire rack to allow coating to set. Pour enough oil into large deep skillet to measure 1 inch. Heat over medium high heat until end of shrimp dipped in oil sizzles at once. Add half the shrimp to skillet and fry, turning once, until shrimp are cooked through and coating is deep golden brown, about 2 minutes. Using slotted spoon, transfer shrimp to paper towels to drain briefly. Fry remaining shrimp in same manner. Serve hot as an appetizer.
