Pineapple Shrimp

Ingredients
1 can (8 oz.) Dole Crushed Pineapple, drained
1 can (4 1/4 oz.) Pacific shrimp, drained
1/4 c. reduced calorie mayonnaise
1 tbsp. minced green onion
2 tsp. Dijon-style mustard
1/2 tsp. dill weed
2 cucumbers

Preparation:
Low Cholesterol. Makes 30 appetizers. Combine all ingredients except cucumbers. Cut cucumbers in 1/8 to 1/4 inch thick slices. Spoon heaping teaspoon of pineapple mixture on top of each slice. Garnish with dill or minced green onion if desired. Variation: Omit mustard and dill weed. Add 2 teaspoons minced cilantro and dash of cayenne pepper.

Choco-Banana Shake

Ingredients
1/2 med. banana
1/2 low fat milk
1 1/2 tsp. chocolate syrup
1/2 tsp. vanilla
4 ice cubes

Preparation:
Blend all except ice cubes on high until blended. Add ice cubes one at a time.

Crab Fettucini

Ingredients
6 oz. fettucini
4 tbsp. margarine
2 cloves garlic, minced
1 c. milk
1/2 lb. crab, flaked
1/4 c. parmesan cheese
Pepper to taste

Preparation:
Cook fettucini according to package. In skillet, saute garlic in margarine. Add milk, crab and pepper. Heat until bubbling, about 3 minutes. Add parmesan cheese and stir 1 minute. Toss with cooked fettucini. Serves 4.

Wild Rice

Ingredients
1 c. wild rice
4 c. water
2 cubes chicken or beef bouillon
1/2 tsp. salt1 can cut up mushrooms
1 can mushroom soup

Preparation:
Boil and simmer 1 1/2 to 2 hours. Stir. Add: Season, salt and pepper. Heat and serve.

Crab Meat Salad

Ingredients
1 lb. crab meat, fresh or canned
2/3 c. mayonnaise
1/8 tsp. Cayenne

Preparation:
Mix together and arrange on lettuce leaf. Garnish with tomato and cucumber and Avacado and black olives. Sprinkle with paprika.

Cajun Shrimp

Ingredients
1/2 c. olive oil
2 tbsp. cajun seasoning
2 tbsp. lemon juice
2 tbsp. fresh parsley, chopped
1 tbsp. honey
1 tbsp. soy sauce
Pinch cayenne pepper
1 lb. shrimp, uncooked, shelled and deveined

Preparation:
Combine first seven ingredients in a 9″ x 13″ baking dish. Add shrimp and toss to coat. Refrigerate at least 1 hour. Preheat oven to 450 degrees. Bake until shrimp are cooking through, stirring occasionally, about 10 minutes. I sometimes serve with fettucini alfredo and French bread.
