Ingredients1 c. oat bran, pulverized into flour
1/2 c. flour
1/2 c. oatmeal
1/2 c. brown sugar
2 tsp. baking powder
1/2 c. chopped dates
4 egg whites, or 1/2 c. egg substitute

Preparation:
Preheat oven to 350 degrees. Spray an 8 inch square baking pan with cooking spray. Combine pulverized oat bran, flour, oatmeal, brown sugar and baking powder; stir in dates. In a small bowl combine the 4 egg whites or egg substitute, oil and vanilla. Add to the dry ingredients, with your hands mix and squeeze the ingredients together until you have formed a dough that just holds together. Pat the dough into the prepared baking pan. Beat the 2 egg whites until stiff, then gradually add the brown sugar, a tablespoon at a time until all of it has been mixed. Spread over the dough and bake for 45 minutes. Cool to room temperature and cut into squares. Calories: 128. Fat: 2.4 grams. Cholesterol: 0. Sodium: 84 milligrams.

Beat together. Sift together: Mix together and add 1 1/2 cups nuts. Grease and flour 2 loaf pans. Bake at 350 degrees for 45-50 minutes.

Ingredients1 1/2 c. all-purpose flour
1 1/2 tsp. sugar
1 1/2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
1/2 c. shortening
2/3 c. buttermilk or use regular milk and omit baking soda
1 tbsp. margarine or butter, melted
Preparation:
Preheat oven to 450 degrees. Mix flour, sugar, baking powder, salt and baking soda; cut in shortening until mixture resembles fine crumbs. Stir in buttermilk until dough leaves side of bowl and rounds up into a ball. (If dough is dry, stir in 1 or 2 tablespoons additional buttermilk.) Turn until lightly floured surface. Knead lightly until smooth, about 10 times. Roll or pat dough 3/4 inch thick; cut with 2 1/2 inch biscuit cutter. Place on cookie sheet (about 1 inch apart for crusty sides, touching for soft sides). Brush tops with melted margarine or butter. Bake until golden brown 12 to 15 minutes. Immediately remove from cookie sheet. Makes 6 large biscuits. Serve warm with butter and honey, sure to melt in your mouth!

3 c. flour, minus 3 tbsp.

Preparation:
Mix all ingredients together until blended. Bake in a loaf or bundt pan at 350 degrees for 90 minutes.

Ingredients4 fresh or frozen flounder fillets or other fish fillets with skin removed, about 1 1/2 lb.
Olive Oil, enough to cover skillet bottom
1 to 2 tbsp. frozen lemonade concentrate
1 lg. egg white, beaten
1 c. corn meal
Preparation:
Use large skillet with bottom covered with oil. Add 1 tablespoon lemonade concentrate (1 to 2 according to taste) to beaten egg white. Beat until well mixed. Roll fillet in egg white and lemonade mixture. And then roll in corn meal. Place in hot, oiled skillet and fry until brown. Turn and brown. fry only a few minutes or if you prefer, place fillets in covered baking dish and bake at 350 degrees for 20 to 25 minutes. Serve with tartar sauce.
