Ingredients1 (7 oz.) water packed tuna
1/2 c. celery, chopped
1/2 c. peeled cucumber, chopped
Low calorie Italian dressing
1 c. cottage cheese
1 tbsp. lemon juice
4 slices pineapple (in it’s own juice)
4 slices tomato
Lettuce
Preparation:
Drain tuna well and break up with fork. Add celery, cucumbers and lemon juice. Toss mix with enough dressing to moisten. Set pineapple on lettuce. Top with tuna. Add cottage cheese and tomato.

Ingredients3 lb. ground turkey
1 lg. can kidney beans
3 lg. cans Hunt’s tomato sauce
1 can tomatoes
1 pkg. Sweet and Low
1/2 pkg. McCormick chili mix
3 tsp. Frank’s chili powder
Preparation:
Brown the turkey with 1 chopped onion, drain. Add Sweet and Low to tomatoes and mix well. Put in a large pot. Add kidney beans, tomato sauce, tomatoes, chili mix and chili powder. Stir well. Cover and cook on low heat 1 hour.

Ingredients1 box croutons, crushed
1/4 c. butter, melted
6 tbsp. grated cheese
1 (10 oz.) chopped spinach, drained
1 lb. cottage cheese
4 oz. Cheddar cheese
3 eggs, beaten
1 sm. onion, chopped
2 tbsp. sour cream
1 clove garlic
Preparation:
Melt butter, mix with croutons, then press onto 10-inch pie plate. Bake until golden. Mix all other ingredients. Pour onto pie shell. Bake at 350 degrees for 35 minutes. Let set 5 minutes before slicing.

Ingredients2 c. Zucchini, shredded
2 eggs
1/4 c. onion, finely chopped
1/2 tsp. salt
2 tsp. baking powder
2 tbsp. Parmesan cheese
1 1/2 c. flour

Preparation:
In large mixing bowl, combine zucchini, eggs, onions, salt and cheese. Gradually stir in flour and baking powder until combined. Drop by heaping tablespoons into deep hot fat (365 degrees) and fry for 1/2 to 2 minutes. Drain on paper towels. Serve warm. Sprinkle with cheese, if desired. Makes 12 fritters.

Ingredients2 tbsp. margarine
1 (10 3/4 oz.) low fat cream of chicken soup
1 (6 oz.) low fat sour cream
1 1/2 c. shredded low fat Cheddar cheese
1 (32 oz.) pkg. frozen hash brown potatoes
3/4 c. corn flake crumbs
Vegetable oil spray
Preparation:
Heat margarine, sour cream, soup and cheese until cheese melts. Spray with oil a 9×13 inch dish. Put potatoes in dish. Pour cheese mixture over potatoes. Sprinkle with corn flake crumbs. Spray lightly with oil spray. Bake at 350 degrees for 1 hour. Serves 10-12.

Ingredients2 skinless chicken breasts
1 c. noodles (use those made without egg yolks, if possible)
1/4 c. rice
Small onion, chopped fine
Mrs. Dash, black pepper and garlic to taste
Preparation:
Cut chicken in bite size pieces. Put in soup pot with quart of water. Add the finely chopped onion and simmer for 20 minutes. Add noodles, rice and seasonings. Cover and simmer for 20 more minutes. May need to add more water depending on consistency desired. I like to add the rice to give the soup a little more body.
