Turkey Lasagna

Ingredients
1 c. chopped onion
5 cloves minced garlic16 oz. ground turkey
Salt and pepper to taste1 can Italian tomatoes, chopped
2 cans tomato sauce
1/2 tsp. salt
1 tsp. oregano
1 tsp. basil leaves2 c. cottage cheese (blended slightly in blender)
3/4 tsp. salt
1/4 tsp. pepper
1 egg, slightly beaten

Preparation:
Add ingredients and simmer for 25 to 30 minutes. Cook noodles and 6 ounces lasgna noodles according to directions. Layer noodles, tomato mixture, cottage cheese mixture and 8 ounces Mozzarella cheese, ending with sauce. Bake at 350 degrees for 30 to 40 minutes. 9 servings.

Browned Partridge

Ingredients
2 (4 lb.) partridges
4 sm. onions
5 tbsp. olive oil
1/2 c. flour
1 clove garlic, chopped
1 c. canned tomatoes
1 c. sliced mushrooms
1 lg. green pepper
Salt & pepper to taste

Preparation:
Cut partridge into serving pieces. Season with salt and pepper; roll lightly in flour. Heat oil in skillet and brown partridges on all sides for about 10 minutes. Stem, seed and slice green peppers lengthwise. Mix with onions, garlic and tomatoes; add mixture to partridge. Cover, simmer slowly for 40 minutes; add mushrooms; simmer 15 minutes or until mushrooms and partridge are tender. Serve very hot. Serves 4 to 6.

Mushroom Chicken and Rice

Ingredients
2 c. rice
2 cans cream of mushroom or golden
mushroom soup
2 cans water
2 chickens (cut into serving pieces)
2 sm cans chopped mushrooms
1/4 tps garlic powder
Salt to taste
Pepper to taste

Preparation:
Put rice, soup, mushrooms, water and seasonings into Dutch oven (12 inch). Stir. Place chicken on top of mixture. Cover. Cook 1 1/4 to 1 1/2 hours at 400 degrees.

Lemon Baked Chicken

Ingredients
1/2 c. lemon juice or 4 lemons
9 tsp. flour
Salt and pepper to taste
12 oz. chicken breast

Preparation:
Marinate chicken breast in lemon juice. Refrigerate for at least 1 hour or overnight. Heat oven to 350 degrees. Spray pan with Pam. Combine flour, salt and pepper. Cover chicken pieces in the flour mixture. Put chicken pieces in pan and cook until brown, 50 to 55 minutes.

Baked Pheasant

Ingredients
1 pheasant
1 qt. boiling water
3 stalks celery
1 onion
1 tsp. salt
1/8 tsp. pepper
4 strips bacon
1 c. water

Preparation:
Clean pheasant, pour boiling water over it. Put celery and onion on bird. Don’t stew up. Rub bird with salt and pepper. Add 1 cup water, cover and bake in oven at 350 degrees.

Southern Shrimp Butter

Ingredients
2 cans shrimp, broken
1 tbsp. onion, minced
Juice of 1 lemon
4 tbsp. mayonnaise
1 1/2 sticks soft butter
Salt to taste
1 (8 oz.) pkg. cream cheese

Preparation:
Mix all ingredients well with mixer, adding shrimp last. Makes a large amount, and freezes well. This is a spread rather than a dip. I serve with Club crackers.
