Italian Chicken

Ingredients
8 boneless and skinned chicken breasts
1 c. marinara sauce or oil free Italian sauce
1 white onion, sliced
6 tbsp. grated Parmesan cheese

Preparation:
Place chicken in baking dish and cover with onion slices. Top with Italian sauce and sprinkle with Parmesan cheese. Cover, bake at 350 degrees for 40 to 45 minutes or until tender.

Hot Cattage Potato Salad

Ingredients
10 lg. potatoes, cooked and cubed
1 lg. green pepper, diced
1 lg. onion, diced
1/2 to 3/4 lb. cubed cheese (Muenster, Colby, or Velveeta)
1 sm. jar pimento, chopped
4 slices soft bread, cubed2 sticks butter or margarine
3/4 c. milk
Salt and pepper to taste
1 c. corn flakes, crushed

Preparation:
Toss together all of the above ingredients. Melt butter or margarine in milk. Add salt and pepper. Add above tossed ingredients. Mix all together. Place in 9×13 inch casserole dish. Sprinkle corn flakes on top. Bake at 400 degrees for 45 minutes.

Pork Chop and Green Bean Cassarole

Ingredients
6 rib or loin pork chops, 3/4″ thick
2 (10 oz.) pkgs. frozen cut green beans, defrosted
2 cans cream of celery soup
1 c. milk
1/4 tsp. Salt

Preparation:
Brown chops, season with salt and pepper. Mix together beans, soups, milk and 1/4 teaspoon salt. Pour mixture into a 2 quart baking dish. Arrange pork chops on top. Cover and bake in 350 degree oven for 45 minutes or until meat is done.

Flounder Florintine

Ingredients
20 oz. pkg. chopped spinach, thawed
4 flounder fillets (4 oz. each)
2 tbsp. minced fresh onion (or 2 tsp. instant)
8 tbsp. skim milk
Ground nutmeg
4 (1/2 oz.) slices extra sharp Cheddar cheese
2 tbsp. lemon juice
Seasoned salt, pepper, paprika to taste

Preparation:
Spray bottom of 8 inch baking dish with cooking spray. Mix spinach with onion, and spread over bottom of baking dish. Pour milk over spinach. Sprinkle with nutmeg. Break cheese slices into pieces and arrange over spinach. Place fish fillets over cheese in a single layer. Sprinkle with lemon juice, salt, pepper, paprika. Cover dish tightly with foil. Bake 20 minutes in preheated 400 degree oven until fish flakes easily. Serves 4 at 195 calories each.

7-Up Jello Salad

Ingredients
1 lg. or 2 sm. pkg. lemon Jello
2 c. boiling water
16 oz. (2 c.) 7-Up
2-3 sliced bananas
1 sm. crushed and drained pineapple (save juice)
2 tbsp. instant flour (Wondra)
1 c. pineapple juice
1/2 c. sugar
1 egg

Preparation:
Dissolve Jello in boiling water. Add 7-Up. Cool. Pour into 9×13 inch pan. Add bananas and pineapple. Cover with miniature marshmallows. Refrigerate until set. In a saucepan, mix above ingredients. Cook all until pudding consistency. Take off heat. Add 2 tablespoons butter and stir. Cool. Spread this over marshmallow layer. Top with 4 oz. grated American cheese (buy it by the chunk in Deli).

Pork Chop and Lima Bean Cassarole

Ingredients
4 loin pork chops, cut 3/4 inch thick
3/4 tsp. salt
1 tsp. dry mustard
1 tsp. sugar
Pepper
1 tbsp. chopped onion
1/4 c. water or liquid drained from beans
1/2 c. tomato puree
1 can baby lima beans (1 lb. 4 oz.) drained

Preparation:
Brown chops on both sides in frying pan. Then remove chops from pan. Add 1/4 teaspoon salt, mustard, sugar, pepper, onion, water and puree to drippings and blend well. Add lima beans, stir until well coated, then put them in 4 individual (or 1 large casserole) and top with pork chops. Sprinkle chops with remaining salt and bake uncovered in a preheated oven, 350 degrees, 1 hour 10 minutes.
