Peach Crispy

Ingredients
2 c. peaches or other fruit, fresh or drained
1 c. grapenut
1 tsp. cinnamon
1/2 tsp. cloves
2 tbsp. low-calorie margarine
2 pkgs. Sweet & Low

Preparation:
Place peaches in baking dish. Sprinkle one pack of Sweet & Low and half spices over them. Cover with grapenut, rest of spice and sweetener. Place margarine on top and bake in microwave for 6 to 8 minutes. Enjoy! Very good for breakfast.

No Cholesterol Brownies

Ingredients
1/4 c. corn oil margarine
1/2 c. sugar
1/2 c. brown sugar, packed
1/2 c. all purpose flour
2 tbsp. unsweetened cocoa
2 egg whites
1 tsp. vanilla extract
Non stick cooking spray
1/4 c. walnuts, chopped

Preparation:
Melt the margarine in large bowl. Add all ingredients except walnuts. Mix well. Stir in walnuts. Spread batter evenly in an 8 x 8 x 2 metal pan sprayed with nonstick cooking spray. Bake at 350 degrees for 30 minutes or until done. The middle portion should be soft. Cool before cutting 2 inch square.

Diet Applesauce Bread

Ingredients
1 slice whole wheat bread
1/3 c. dry milk powder
3 tsp. brown sugar substitute
1 tsp. cinnamon
1/2 tsp. orange rind
1/2 tsp. butter extract
1/4 tsp. baking soda
1 egg
4 oz. unsweetened applesauce

Preparation:
Crumble bread and add dry ingredients. In another bowl, combine egg, butter extract, and applesauce. Combine the two and mix until smooth. Bake in a 2 x 4 inch loaf pan at 350 degrees for 30 to 35 minutes

Diet Cocoa Brownies

Ingredients
1 c. sugar
1 tbsp. Sweet and low (artificial sweetener)
8 tbsp. cocoa (unsweetened)
1/2 c. corn oil
1 c. unsifted flour
1/2 tsp. salt
1/4 tsp. baking powder
1/2 c. broken nuts
5 sm. eggs (4 med.)
2 tsp. Vanilla

Preparation:
Beat eggs well, add liquid ingredients. Add dry ingredients, beat well. Pour into greased and floured 9 x 15 inch pan. Bake at 350 degrees for 25 minutes until springs back to touch. Cool, cut into 2 inch squares. Serves.
